These deliciously savory muffins pack a nutritional punch with ingredients like grated sweet potatoes, rolled oats, almond flour, and yogurt, in addition to many of the traditional muffin ingredients. The ‘everything bagel’ seasoning elevates the flavor to another level. So satisfying!

While the sweet potato adds just a hint of sweetness, the flavorful seasonings and the rich, moist texture evokes the distinctive essence of an everything bagel. Slice it in half, slather on a bit of cream cheese or butter, and it’s even better.

I was looking for a breakfast muffin that could help fuel us for a busy morning, and this muffin recipe delivers. The grated sweet potato, in addition to the protein from the yogurt and eggs, all work together to add substance to the flours and rolled oats. My husband and I both enjoyed including a muffin (or two in his case!) in our breakfast lineup this past week.
The recipe is based on one I found in the Rise and Run cookbook by Shalene Flanagan and Elyse Kopecky. I omitted the chopped onion and used unbleached all purposed flour instead of whole wheat flour, but otherwise stuck close to their recipe. For the everything bagel seasoning, I simply measured from my jar of Trader Joe’s Everything but the Bagel Sesame Seasoning Blend. It is so very tasty and easy, as all the spices are already calibrated and combined.

I must admit, grating one and a half cups of sweet potato by hand is a bit labor-intensive. However, I personally find it very satisfying and relaxing to work with my hands in the kitchen. If you are short on time or if grating by hand is not appealing, a food processor can make this part quicker and easier. Either way, in my opinion it is totally worth it as the sweet potato adds important nutrients, rich texture, and a subtle sweet flavor that balances nicely with the spices.

Happy May Day! It is a chilly day here in Michigan for the first day of May, but I’ll take it. Spring is a beautiful time, even if we have to bundle up in sweaters and jackets. The grass is green and the cherry blossoms and redbuds are in full bloom. When I was a young girl, on May Day I used to pick tulips, daffodils, violets and dandelions from our yard and leave secret bouquets at the doorsteps of our neighbors. I would knock on their doors or ring their doorbells and then run away, leaving my anonymous bouquets for them to find when they opened the door. That was back in simpler times, before ring security cameras.

Sweet Potato Muffins with Everything Bagel Seasoning
Ingredients:
1/4 cup of extra virgin olive oil
1 and 1/2 cups of unbleached all purpose flour
1 cup of old fashioned rolled oats
3/4 cups of almond flour
1/4 cup of everything bagel seasoning mix (I use Trader Joe’s Everything but the Bagel Sesame Seasoning Blend)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
6 eggs
1/2 cup of plain whole milk yogurt
1 and 1/2 cups of grated, peeled sweet potato (about 1 large or 2 medium/small ones)
Directions:
Make sure one of your oven racks is in the center position of the oven. Preheat the oven to 350 degrees Fahrenheit. Line a 12-cup muffin tin with liners or grease the insides of the tin.
Wash, peel, and grate 1 and 1/2 cups of sweet potato. (You can use a box grater or hand grater or a food processor). Squeeze some of the excess moisture out with a paper towel. Set aside.
In a medium mixing bowl, combine the all purpose flour, rolled oats, almond flour, 2 Tablespoons of the everything bagel seasoning mix, baking powder, baking soda, and a 1/2 teaspoon of salt. Stir with a fork until fully combined.
In a large mixing bowl, add the eggs, yogurt, olive oil and whisk until well combined. Stir in the grated sweet potato. Then add the dry ingredients from the other bowl, gradually stirring with a wooden spoon until just combined.
Spoon the batter into the muffin cups, filling to just above the brim. Then sprinkle the remaining 2 Tablespoons of the everything bagel seasoning mix on top of the muffins. Press it gently into the tops of the batter.
Bake on the center rack in your 350-degree oven for about 30 to 35 minutes, until the muffins are light brown on top and a toothpick or knife inserted into the center of a muffin comes out clean. Enjoy!
