Cherry-Cranberry Crisp

A radiant cherry and cranberry filling, mixed with a classic crisp topping of oats, graham cracker crumbs, and brown sugar, makes this cherry-cranberry crisp burst with flavor and color.  If you are looking for a festive and delicious holiday dessert that is easy and doesn’t involve making a pie crust, then this is a great option!  Don’t get me wrong, I love to make pies–in fact I will be making one this evening–but…sometimes it’s nice to throw a dessert together quickly and without much fuss.  And the gorgeous colors and many health benefits of tart cherries and cranberries are an added bonus!

cherry-cranberry crispI used frozen Montmorency red tart cherries and frozen cranberries for this recipe.  I have written in a previous post about my love for this particular type of cherry (Michigan is known for them), but any tart cherry would work fine.  I made the filling for this crisp before assembling it and baking it, so I could make sure I had the level of sweetness that I wanted.  Everybody has a different threshold for tartness, and this way you can adjust the sweetness before you bake the crisp.

Also, it helps to make sure you mix the cherries and cranberries well while they are cooking in the filling, because the cherries are sweeter than the cranberries, and if someone ends up with a spoonful of mainly cranberries, they may be in for a very tart surprise! However, when mixed up, the cherries and cranberries make a delightful burst of sweet-tartness, and I am so pleased with this very bright flavor and color, and the antioxidants inside it all.

cherr-cranberry-crispThe crisp topping is very simple.  My aim with this crisp is to make it as flavorful and at the same time as easy as possible, so it can be a recipe you can turn to when you are a bit pinched for time, but still want a beautiful dessert.  It is a crisp topping I use all fall for apple crisp, and it is simply four ingredients–old fashioned rolled oats, graham crackers, brown sugar, and a bit of butter.

I can hardly believe that Thanksgiving is tomorrow already, in addition to it being my husband’s birthday! And my daughter’s birthday is a few days after that.  Busy times, and yet I am trying to focus on what is most important, and one of those things continues to be gratitude.  In these times when there are pressures about holiday shopping, I try to remember also that time is a gift.  Spending time with loved ones is a gift, especially if you can be fully present for them.

Cherry-Cranberry Crisp

  • Servings: 6

Ingredients:

For the filling:

  • 4 cups of frozen tart cherries
  • 2 cups of frozen cranberries
  • 1 cup of sugar (or a bit more, if you desire more sweetness and less tartness)
  • 3 tablespoons of cornstarch
  • 1/4 tablespoon of almond extract

For the topping:

  • 1/2 cup of old fashioned rolled oats
  • 1/2 cup of graham crackers, crumbled
  • 2 tablespoons of brown sugar
  • 3 tablespoons of unsalted butter, cold and cut into small pieces

Directions:

Preheat your oven to 350 degrees Fahrenheit.  Get out a 9 x 9 inch baking dish (8 x 8 inch works too).

Place the frozen cherries and cranberries in a medium saucepan.  Add the sugar, cornstarch, and almond extract.  Gradually bring to a boil, stirring as the mixture warms up, to combine the ingredients. When the mixture starts to boil, stir it continually for about a minute, as it starts to thicken and the fruit bursts.  Turn the heat down and simmer for a couple of minutes, tasting the filling and adding more sugar if desired.  (My family likes it with the 1 cup of sugar, so it’s sweet but with a hint of tartness.  If you are used to more sweetness, you might want to add a bit more sugar.) Let the filling cool a bit while you make the topping.

In a small bowl, combine the oats, graham cracker crumbs, and brown sugar.  Spoon the filling into the baking dish.  Make sure the cherries and cranberries are mixed up, so they can complement each other, and not be in their own corners of the baking dish. Sprinkle the topping evenly over the filling.  Dot the butter pieces on top of the filling, distributing them evenly.  Bake in your 350-degree oven for 15 to 20 minutes, or until the topping is golden.  Serve warm or at room temperature. Serve with vanilla ice cream if desired. Enjoy!

Revitalizing Berry Smoothie

Treat your body to a smoothie full of vibrant flavors and important nutrients.  Frozen blueberries, tart cherries, and cranberries give this smoothie lots of flavor and antioxidants, not to mention a naturally beautiful color.  Ground flax seeds and hemp seeds add Omega 3 and 6 fatty acids, protein, and lignans, among other nutrients, which is probably why these little seeds are sometimes called “super seeds.”  Just add a splash of cranberry juice and a handful of ice, blend it all up, and you have a bright, tasty beverage full of anti-inflammatory properties.

berry smoothie with purple 6There is a lot of talk these days about chronic inflammation and how it contributes to a lot of health problems, including arthritis, heart disease, auto-immune disorders, and depression.  And apparently, in our modern society, many are at risk of developing chronic inflammation with our processed foods, high sugar intake, and fast-paced lifestyle.

berry smoothie with glassI am definitely not an expert on inflammation in the body, but what I read makes a lot of sense.  According to Paul DiCorleto, PhD, in an article for the Cleveland Clinic, inflammation is the body’s natural way of fighting an illness or injury.  When the illness or injury is healed, the inflammation response is supposed to shut off.  However, sometimes the body’s inflammation response does not stop, due to chronic anxiety, diet, or other factors. “Over time, you can end up with too much of a good thing. With chronic inflammation, your body is on high alert all the time,” says Dr. DiCorleto.  This can cause lots of problems within the body.

DiCorleto and other experts recommend making lifestyle choices that will help reduce the risk of developing chronic inflammation. These include regular exercise and eating and drinking lots of plant-based foods, which contain anti-inflammatory properties.  Berries, flax seeds, and hemp seeds are all considered anti-inflammatory foods.

berry smoothie on towelSometimes when I am very stressed out and not taking good care of myself, I can feel like my body is out of balance. That is when I reach for things like this smoothie, and I feel like I am putting good things back into my body, soothing it and energizing it at the same time.  It’s all about striving for that balance.

We may not be able to hold ourselves in balance for long periods of time, but we can continually try to keep bringing ourselves back into balance.  It’s in that process that we feel alive.  According to poet and philosopher Rumi, “Your hand opens and closes, opens and closes. If it were always a fist or always stretched open, you would be paralysed. Your deepest presence is in every small contracting and expanding, the two as beautifully balanced and coordinated as birds’ wings.”

Mixed Berry Revitalizing Smoothie

  • Servings: 2

Ingredients:

  • 1/4 cup of frozen cranberries
  • 1/2 cup of frozen tart cherries (preferably tart Montmorency cherries)
  • 1/2 cup of frozen blueberries
  • 1 to 2 tablespoons (depending on your taste) of ground flax seeds (you can buy them already ground, or you can buy them whole and grind them in a coffee grinder)
  • 1 to 2 tablespoons (depending on your taste) of hemp seeds
  • 2 cups of cranberry juice
  • a handful of ice

Directions:

Place all the ingredients in a blender and puree until smooth.  Pour into glasses and enjoy!

Cherry Cranberry Smoothie

Bursting with flavor and color, this smoothie will pick you up and infuse you with vitality.  Tart cherries and cranberries are sweetened with a splash of cranberry juice, and a banana makes the texture thick and smooth.  With only four ingredients, this smoothie is a breeze to make, yet it tastes like a special treat.

cherry cranberry smoothie overviewTart cherries freeze beautifully, and I like to keep a bag or two of Montmorency tart cherries, grown right here in Michigan, in my freezer. Then I can pull them out throughout the year to make a cherry pie, or in today’s case, a smoothie.  With the cherries and the cranberries, this smoothie is loaded with antioxidants.  There has been a lot of press about the health benefits of tart cherries–that they help with arthritis, sleep, fighting cancer, and many other things.  Whether or not all the hype is a little over the top, I still believe cherries are good for us. Just a sip of this smoothie, and I know I am drinking in lots of good nutrients.  There is some sugar from the cranberry juice, but otherwise the cherries and cranberries are too tart for most people, and there is not a lot of juice in this smoothie–just enough.

Several deep breaths. Cherry Cranberry Smoothie

  • Servings: 4

Ingredients:

  • 2 cups of frozen tart (preferably Montmorency tart) cherries
  • 1/2 cup of cranberries (frozen or refrigerated is fine)
  • 1 banana
  • 1 and 1/4 cups cranberry juice (I use one that is 27% juice, so it has some sugar in it, but not as much as some do)

Directions:

Place the cherries and cranberries in a blender.  Add the sliced banana and cranberry juice. Blend until smooth. Pour into four glasses. Serve with a straw. Enjoy!
