Simple, Tangy Salad Dressing

Ingredients:

  • 2 Tablespoons white wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1/4 teaspoon reduced sodium soy sauce
  • 1/4 cup olive oil
  • 1/2 teaspoon curry powder
  • 1 teaspoon sugar
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon cumin

Directions:

Combine ingredients in a jar and shake well.  Pour over a green salad of your choice.  Try it over mixed greens with optional toppings like dried cranberries, chopped chives, sunflower seeds, slivered almonds, grated Parmesan cheese, diced apple, or diced cooked chicken.  Refrigerate any leftover dressing. I’m so glad you posted this! I had copied this recipe from you years ago on a napkin, which I’ve been unable to find! I have thought of this dressing often … The curry makes it extra special . Making it tonight.
